Crunchy Classics

Soda crackers are a classic crispy biscuit. Its origin can be traced back to the early 19th century, and there are several versions of the story of the specific origin.

One theory is that soda cakes originated in England. In the early 19th century, the British invented sodium bicarbonate (soda) as a leavening agent for flour, making bread and biscuits more crispy.

The new leavening agent releases carbon dioxide from the dough, which puffs up the biscuit and creates air bubbles to lighten it.

Another theory is that soda crackers originated in the United States. When cooking stoves and ovens were scarce, early pioneers and farmers in the American West created a simple biscuit recipe that contained only a few basic ingredients, such as flour, soda, and water. These cookies can be baked in the wild and last for a long time because they are relatively dry and hard.

Regardless of whether the origin is in the UK or the US, the soda cracker has become a classic food and is widely loved. Modern soda crackers often include some sugar and salt in the recipe to enhance their taste. They can be eaten as a refreshment, breakfast food, or snack and are popular in many places.
